- 🥚 1 egg
- 🍤 4 peeled shrimp (60g)
- 1 yurine bulb (70g)
- 🍄 4 slices of shiitake mushroom
- A pinch of chopped mitsuba
Seasonings
- 1 tsp sake
- 1 tsp mirin
- 1 tsp soy sauce
- 1/4 tsp Japanese dashi granules
- 💧 150 ml water
ÉTAPES
Separate the yurine bulb into individual petals in water, clean them, and cut larger pieces in half.
Crack the egg into a bowl and mix well. Add the seasonings (☆) and mix thoroughly. Strain the egg mixture through a tea strainer into another container.
Divide the yurine, shiitake, and shrimp evenly into heatproof containers. Pour the egg mixture gently into each container. Cover with aluminum foil and prepare two portions.
Boil water in a pot and place a steamer inside. Add the prepared containers, cover the pot, and steam on medium-high heat for 2 minutes. Reduce to low heat and steam for 10–12 minutes. Garnish with chopped mitsuba.
