BAHAN-BAHAN
Fish
- 300g anglerfish, cut into chunks
- ๐ 150g clams, pre-soaked
Vegetables
- ๐ง 1 clove garlic, crushed
- ๐ 8 cherry tomatoes
- 8 green olives, pitted
Seasoning
- ๐ง Pinch of salt
- Pinch of white pepper
Other
- 2โ3 tbsp all-purpose flour
- 1.5 tbsp olive oil
- 100ml white wine
- ๐ง 50ml water
- ๐ฟ 3 sprigs Italian parsley, chopped
Preparation
- 2 tbsp sake
- ๐ง Pinch of salt
Final Seasoning
- ๐ง 1/5 tsp salt
- Pinch of white pepper
LANGKAH
Sprinkle the anglerfish with sake and salt, let sit for 30 minutes. Boil water in a pot, blanch the anglerfish until the surface turns white. Rinse under water and remove slime.
Pat the anglerfish dry with paper towels, season both sides with salt and white pepper, and coat evenly with flour.
Heat olive oil and garlic in a frying pan over low heat until fragrant. Add the anglerfish and cook over medium heat until both sides are golden brown.
Add white wine and simmer over low heat for 2โ3 minutes. Add water, cherry tomatoes, green olives, and clams. Cover and steam over medium-low heat for 5โ6 minutes.
Adjust seasoning with salt and white pepper. Serve on a plate and garnish with chopped Italian parsley.
