LANGKAH
Quarter the onion.
Place the pork spare ribs in a pot, cover with water, and bring to a boil. Drain and rinse the ribs to remove impurities.
Clean the pot, then add the pork spare ribs, onion, garlic, ginger, spices (β), and seasonings (β ). Heat over medium heat until boiling, then reduce to low heat and simmer for 2 hours, skimming off any scum occasionally.
Serve in bowls, garnished with spring onion and cilantro.
