Remove the vein from the shrimp, wash, and pat dry. Chop finely with a knife.

Mix shrimp, cilantro, and seasonings (sake, fish sauce, ginger, cornstarch) in a bowl until sticky. Divide into 6 portions.

Pat dry the lotus root slices and coat one side with cornstarch. Place 1/6 of the filling on the cornstarch-coated side and sandwich with another slice. Repeat for all 6 sandwiches.

Heat salad oil in a frying pan over medium-low heat. Add the sandwiches and cook until golden brown on one side. Flip, cover, and cook on low heat for 4–5 minutes until fully cooked.
