BAHAN-BAHAN
Main
- 2 slices (100g) foie gras
- 220g beef tenderloin steak
- Flour as needed
- 🧂 1/2 tsp salt
- Pepper to taste
- Salt and pepper to taste
- 🧈 10g salted butter
Red Wine Sauce
- 50cc red wine
- 🍬 1/2 tbsp sugar
- 1 tbsp soy sauce
- 🧈 10g salted butter
LANGKAH
Bring the beef to room temperature and season with salt and pepper.
Season the foie gras with salt and pepper, then lightly coat with flour.
Heat 10g butter in a frying pan, add foie gras, and cook over medium heat for 2 minutes until browned. Flip and cook for another 2–3 minutes until done. Remove from pan.
Wipe the pan lightly with a paper towel, add the beef, and cook over medium heat for 2 minutes per side. Wrap in aluminum foil and let rest for 5 minutes.
In the same pan, add all sauce ingredients except butter and simmer over medium heat for 2 minutes until thickened. Stir in 10g butter to finish the sauce.
Plate the beef, layer the foie gras on top, and drizzle with the red wine sauce.
