BAHAN-BAHAN
Fish
- 🐟 240g sardines, filleted
Vegetables
- 100g lotus root, chopped
- 8 shiso leaves
- 🧅 10cm green onion, minced
Starch
- 1/2 tbsp potato starch
Oil
- 1 tbsp salad oil
Seasoning
- 1 tbsp sake
- 1 tsp grated ginger
- 1 tsp soy sauce
- 2 tbsp potato starch
Glaze
- 1 tbsp sake
- 2 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 1/2 tbsp soy sauce
LANGKAH
Chop the lotus root into small pieces and soak in water. Drain and coat with potato starch. Mince the green onion.
Remove the bones and skin from the sardines. Chop them coarsely and lightly mash.
In a bowl, mix the sardines with the seasoning ingredients (sake, ginger, soy sauce, potato starch). Add the lotus root and green onion, and mix well.
Place 1/8 of the sardine mixture onto a shiso leaf and cover with another leaf. Shape into patties. Repeat for all 8 portions.
Heat salad oil in a frying pan over low heat. Cook the patties for 2–3 minutes until browned. Flip, cover, and cook for another 2–3 minutes on low heat.
Add the glaze ingredients (sake, mirin, sugar, soy sauce) to the pan and cook over medium heat until the patties are coated.
