BAHAN-BAHAN
Fish
- 🐟 2 fillets of kinmedai (160g)
Vegetables
- 🥕 1/2 carrot (100g)
- 10 boiled ginkgo nuts
- 🟢 4 green beans
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 🧂 1 tbsp soy sauce
- 1/3 tsp dashi powder
- 💧 150cc water
Thickening
- 2 tsp potato starch
- 💧 1 tbsp water
LANGKAH
Peel the carrot and cut into 1cm thick rounds. Make decorative maple leaf shapes by cutting V-shaped notches on the sides. Trim the ends of green beans and cut into diagonal thirds.
Make cross-shaped cuts on the skin side of the kinmedai fillets.
In a frying pan, add all ☆ ingredients and heat over medium heat. Once boiling, place the kinmedai fillets skin-side up and add the carrot. Spoon the broth over the fish, cover, and simmer on low heat for about 8 minutes.
Add the ginkgo nuts and green beans, mix gently, cover again, and simmer for another 2 minutes. Transfer the ingredients to a serving plate.
Add the potato starch mixture to the remaining broth in the pan. Heat on low and stir until thickened to create the ankake sauce.
Pour the ankake sauce over the plated ingredients and serve.
