Remove excess fat from chicken thigh and make 4 cuts on the skin side. Season both sides with salt and pepper.

Heat salad oil in a pan and place chicken skin-side down. Cook on medium-low heat for about 5 minutes until browned, removing excess fat with paper towels.

Flip the chicken and cook on low heat for another 5 minutes until fully cooked.

Add sake, lemon juice, and butter to the pan and coat the chicken evenly.

Mix mayonnaise and mustard in a bowl.

Toast bread slices until golden brown and spread the mayonnaise mixture on one side of each slice.

On a piece of plastic wrap, layer one slice of bread, half the lettuce, tomato slices (creating a hollow in the center), boiled egg, chicken, remaining lettuce, and top with the second slice of bread. Wrap tightly and let it set before cutting in half.
