BAHAN-BAHAN

- 50g nira, cut into 4cm pieces
- 200g nagaimo, peeled and julienned
Condiments
- 1 umeboshi, pitted and mashed
- 1/2 tbsp shio koji
Seasoning
- 2g katsuobushi

Cut nira into 4cm pieces. Peel and julienne nagaimo into 7mm strips. Pit and mash umeboshi until fine.

Place all ingredients into a plastic bag and massage gently. Let it sit for 5 minutes.
