BAHAN-BAHAN
Vegetables
- 🍆 480g eggplant, sliced
- 🧅 1 onion, thickly sliced
- 2 green chilies, finely chopped
- 1 red chili, sliced and deseeded
- 🧅 1/2 green onion, sliced
Meat
- 🍖 184g pork loin, marinated
Seasoning
- 🧂 1 tbsp salt
- 2 tbsp corn syrup
- 1 tbsp mirin
- 1/2 tbsp chili powder
- 1 tbsp soy sauce
- 1/3 tbsp doubanjiang
- 1 tbsp oyster sauce
- 🧄 1 tbsp minced garlic
- 🌰 1 tbsp sesame seeds
- a dash of sesame oil
LANGKAH
Slice the eggplant, sprinkle with salt and corn syrup, and let it sit for 30 minutes. Squeeze out excess water and set aside.
Marinate the pork loin with mirin for 20 minutes.
Prepare the vegetables: slice the onion thickly, slice the green onion, finely chop green chilies, and slice red chili while removing seeds.
Mix all the seasoning ingredients to create the sauce.
Heat a pan with cooking oil, cook the marinated pork on medium heat, add onion and eggplant, and stir-fry for 3 minutes.
Add green onion, green chilies, red chili, and pour the sauce over. Stir-fry until everything is well combined.
Finish with a dash of sesame oil and sprinkle sesame seeds. Serve over warm rice.
