BAHAN-BAHAN
Vegetables
- π 150g pumpkin, diced
- π 80g eggplant, sliced
- π₯ 85g zucchini, sliced
- π§ 100g onion, diced
- π 400g tomatoes, diced
- π§ 1/2 clove garlic, minced
Seasonings
- 2 tbsp olive oil
- 1/2 tsp consomme
- π§ 1/3 tsp salt
- Pinch of pepper
LANGKAH
Remove seeds and pulp from the pumpkin and dice into 1.5cm cubes. Slice the eggplant and zucchini into 1cm half-moon pieces. Dice the onion and tomatoes into 2cm cubes. Mince the garlic.
Heat olive oil and garlic in a pot over low heat until fragrant. Add eggplant, zucchini, onion, and pumpkin, then stir-fry over medium heat for 2-3 minutes.
Add tomatoes and seasonings, stir, and cover the pot. Simmer over low heat for 10 minutes until vegetables are tender.
