- π 2 chicken thighs (about 400g)
Vegetables
- π₯ 1 zucchini
- π 1 eggplant
- π 8 cherry tomatoes
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- π 1/4 pumpkin (300g)
Herbs & Spices
- πΏ 2 sprigs rosemary
- π Slices of lemon, as needed
- π§ 1 tsp salt
- π§ Pinch of pepper
- π§ 2 tsp grated garlic
- 100ml olive oil
LANGKAH
Cut zucchini and eggplant into 1cm slices. Remove seeds and stems from bell peppers and cut into bite-sized pieces. Remove seeds from pumpkin and cut into bite-sized pieces. Remove stems from cherry tomatoes.
Cut chicken thighs into bite-sized pieces.
Mix salt, pepper, garlic, and olive oil in a bowl. Add the vegetables, chicken, and rosemary, mixing well. Let marinate for 10 minutes.
Preheat oven to 200Β°C. Line a baking tray with parchment paper and arrange the marinated ingredients. Bake for 25β30 minutes.
Serve on a plate and garnish with lemon slices.
