BAHAN-BAHAN
Fish
- ๐ 150g smelt
Condiments
- ๐ 1 umeboshi (pickled plum)
- 2 slices ginger
Seasonings
- ๐ถ 2 tbsp sake
- 2 tbsp mirin
- ๐ฌ 1 tsp sugar
- ๐ง 1 tbsp soy sauce
- ๐ง 80ml water
LANGKAH
Pat the smelt dry with a paper towel.
In a frying pan, mix all the seasonings (sake, mirin, sugar, soy sauce, and water). Add the smelt, ginger, and umeboshi (breaking it into pieces). Bring to a boil over medium heat, spooning the sauce over the smelt as it cooks.
Once the smelt is cooked through, cover with a drop lid and simmer on low heat for 12โ15 minutes.
Remove the smelt and plate it. Reduce the sauce over medium heat until thickened, then pour it over the smelt. Garnish with the umeboshi and ginger slices.
