Mix the seasoning sauce ingredients: soy sauce, mirin, sugar, chili powder, minced garlic, chili, and black pepper. Stir until the sugar dissolves completely.

Place the fried tofu in the pan and spoon some of the seasoning sauce over each piece.

Layer the onion and green onion on top of the tofu, add more sauce, and pour a small amount of water to prevent burning.

Cover the pan with a lid and let the onions and green onions soften and absorb the sauce.

Add the blanched soybean sprouts on top, drizzle more sauce, and adjust the water as needed. If using raw sprouts, cover the pan again to let them soften.
