BAHAN-BAHAN
Main
- 🍚 200g cooked rice
- 🥚 1 beaten egg
- 1 can (100g) Pacific saury in kabayaki sauce
- 🍆 1 medium eggplant (80g), sliced
Seasoning
- Cornstarch, as needed
- 1/2 tbsp salad oil
- 1 tbsp mayonnaise
- Pinch of sansho pepper
LANGKAH
Remove the stem from the eggplant and slice into 1cm thick pieces. Coat both sides with cornstarch.
Heat salad oil in a frying pan over medium heat. Add the beaten egg and stir until semi-cooked, then remove. Wipe the pan clean with a paper towel.
In the same pan, heat mayonnaise over medium heat. Add the eggplant and cook both sides for 3–4 minutes until golden brown. Add the Pacific saury and 1 tbsp of the canned sauce, stirring to coat.
Serve cooked rice in a bowl, drizzle with the remaining canned sauce, and top with the egg, eggplant, and saury mixture. Sprinkle with sansho pepper.
