INGREDIENTI
Fish
- 🐟 2 fillets horse mackerel
Herbs
- 4 shiso leaves
Condiments
- 1 tbsp plum paste
Powder
- 2 tbsp potato starch
Oil
- Enough salad oil for frying
Seasoning
- 1 tbsp sake
- 🧂 1 tbsp soy sauce
- 1 tsp grated ginger
- 1/2 tbsp sesame oil
PASSI
Cut the horse mackerel fillets in half lengthwise. Cut the shiso leaves in half lengthwise.
Mix the seasoning ingredients (sake, soy sauce, grated ginger, sesame oil) in a bowl. Add the horse mackerel and marinate for 5 minutes.
Pat the horse mackerel dry, spread plum paste evenly on each piece, place a shiso leaf on top, roll it up, and secure with a toothpick. Make 8 rolls in total.
Coat the rolls evenly with potato starch. Heat salad oil in a pot to 170°C (2–3 cm depth) and fry the rolls for about 5 minutes until golden and crispy.
