Cut the bamboo shoots in half lengthwise and rinse off any white residue. Separate the top 5cm of the shoots and cut them in half lengthwise. For the base, cut it in half lengthwise and then slice into 1cm wide pieces.

Heat a frying pan over medium heat and add the butter. Once the butter begins to melt, add the bamboo shoots and sauté for about 3 minutes until golden brown. Add salt and pepper, and stir quickly to combine.
