INGREDIENTI
Main Ingredients
- 🍗 250g chicken thigh
- 🎃 300g pumpkin
- 🧅 100g onion
Seasoning
- 1/2 tbsp curry powder
- 🧂 pinch of salt and pepper
- 1 tbsp salad oil
Broth
- 💧 100cc water
- 🥥 200cc coconut milk
- 🧂 1/3 tsp salt
- 🧂 pinch of pepper
- 1/2 tsp consomme
PASSI
Cut the chicken thigh into bite-sized pieces and season with salt and pepper.
Prepare the pumpkin by removing seeds and tough skin, then cut into bite-sized pieces. Slice the onion thinly.
Heat salad oil in a pot over medium heat. Add chicken skin-side down and cook until browned. Flip and cook for another minute. Add onion and pumpkin, stirring until onion softens.
Add curry powder and stir for 1 minute to release its aroma.
Add the broth ingredients (water, coconut milk, salt, pepper, consomme) and bring to a boil. Cover and simmer on low heat for 10 minutes.
