INGREDIENTI
Sweet Potato Mixed Rice
- 🍚 2 bowls cooked white rice
- 🍠 120g sweet potato, diced
- 1 tbsp black sesame seeds
- 🧂 Pinch of salt
Chicken Breast Mizore-ni
- 🍗 250g chicken breast
- 🧂 Pinch of salt and pepper
- Potato starch, as needed
- 1 tbsp salad oil
- 💧 150ml water
- 50ml 2x concentrated soy sauce
- 300g grated daikon radish
- 1 tsp grated ginger
- 🧅 Chopped spring onion, as needed
Tororo Cucumber with Shirasu
- 1 tbsp shirasu (whitebait)
- 🥒 1/2 cucumber
- 5cm nagaimo (Japanese yam)
- 1 tsp soy sauce
Komatsuna Soy Milk Miso Soup
- 1/2 sheet fried tofu
- 1/4 bunch komatsuna (Japanese mustard spinach)
- 🥕 1/4 carrot, sliced
- 1/3 pack shimeji mushrooms
- 50ml unsweetened soy milk
- 1 tbsp miso paste
- 1/3 tsp dashi powder
- 💧 300ml water
PASSI
Cut komatsuna into bite-sized pieces, slice carrot thinly, trim shimeji mushrooms, and cut fried tofu into 1cm strips.
Dice sweet potato into 1cm cubes and soak in water to remove excess starch.
In a pot, add water, dashi powder, and carrot. Heat over medium until boiling, cover, and simmer for 5 minutes.
Place nagaimo in a plastic bag and crush with a rolling pin. Add cucumber, shirasu, and soy sauce, then mix well.
Add komatsuna, shimeji mushrooms, and fried tofu to the pot. Heat for 1 minute, then reduce heat and dissolve miso paste. Add soy milk and warm gently.
Slice chicken breast diagonally into bite-sized pieces. Season with salt and pepper, then coat with potato starch.
Heat salad oil in a pan over medium heat. Add chicken and cook until browned on both sides. Add water, soy sauce, grated daikon, and ginger. Simmer for 3 minutes.
Microwave diced sweet potato with a pinch of salt and water for 3 minutes. Mix with warm rice and sesame seeds.
Plate the mizore-ni, mixed rice, tororo cucumber, and miso soup. Serve warm.
