INGREDIENTI
Chicken
- 🍗 1 piece (250g) skinless chicken breast
Ume Shiso Tartar Sauce
- 🥚 1 boiled egg
- 2 pickled plums, chopped
- 3 shiso leaves, finely chopped
- 3 tbsp mayonnaise
- 🧂 Pinch of salt and pepper
Batter Mixture
- 🥚 1 beaten egg
- 3 tbsp all-purpose flour
- 1 tbsp water
Other Ingredients
- 🧂 Pinch of salt and pepper
- 60g fresh breadcrumbs
- Enough vegetable oil for frying
PASSI
Remove the seeds from the pickled plums and chop them roughly. Finely chop the shiso leaves.
Mash the boiled egg with a fork in a bowl. Add the remaining tartar sauce ingredients and mix well.
Slice the chicken breast diagonally into bite-sized pieces. Season with salt and pepper.
Prepare the batter mixture by combining the beaten egg, flour, and water in a tray. Dip the chicken pieces into the batter and coat them with breadcrumbs.
Heat vegetable oil to 170°C in a pot. Fry the chicken pieces for about 3 minutes, flipping occasionally, until cooked through and golden brown.
Serve the fried chicken on a plate and drizzle with the ume shiso tartar sauce.
