INGREDIENTI

- 🍗 1 piece (300g) chicken thigh
- 1 tsp salad oil
- 🌾 1 tbsp all-purpose flour
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 🧂 1.5 tbsp soy sauce
PASSI
Trim excess fat from the chicken. Place it skin-side down, make shallow cuts in the thick parts, and cut it in half. Coat both sides with flour.
Heat salad oil in a frying pan over medium heat. Place the chicken skin-side down and press firmly with a spatula to ensure even browning. Cook for 3–4 minutes until the skin is crispy and the edges turn white.
Flip the chicken and cook on low heat for 4–5 minutes until fully cooked. Add the seasoning mixture (sake, mirin, sugar, soy sauce) and bring to a boil over medium heat.
Simmer until the sauce thickens, flipping the chicken to coat it evenly. Slice into bite-sized pieces and serve on a plate.
