- 🍗 500g chicken thigh
- 🧅 1 onion
- 🥔 2 potatoes
- 🧄 5 cloves garlic
- 1 bell pepper
- 🍄 100g oyster mushrooms
Seasoning
- 🧈 2 tbsp butter
- 🧂 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp soy sauce
- 2 tbsp vinegar
- 🍬 1 tbsp sugar
- 🧄 1 tbsp minced garlic
PASSI
Trim excess fat from chicken thighs, rinse, and season with salt and pepper.
Prepare onion, potato, and garlic for frying in chicken fat.
Cut bell pepper and mushrooms for sautéing with butter.
Heat a pan and place chicken thighs skin-side down to render fat and cook without added oil.
Add potatoes to the rendered chicken fat and cook until tender.
Add garlic and butter to the pan, cooking until chicken is fully done.
Remove chicken and vegetables, then sauté onion, bell pepper, and mushrooms in the same pan with butter.
Prepare garlic soy sauce by combining butter, soy sauce, vinegar, minced garlic, sugar, and a splash of water in the pan.
