INGREDIENTI
Main
- 🍗 200g of chicken tenders, no sinew
- 🧀 4 slices of cheese
- 🧂 A pinch of salt and pepper
- 🌾 2 tablespoons of all-purpose flour
- 1 tablespoon of olive oil
Egg Mixture
- 🥚 1 egg
- 🧀 1 tablespoon of grated cheese
Side Dish
- 🥬 1 bag of baby leaf greens
- 🍅 4 cherry tomatoes
PASSI
Place the chicken tenders on plastic wrap and pound with a rolling pin until doubled in size. Remove the wrap and season with salt and pepper. Fold a slice of cheese in half and place it in the center of the chicken. Lightly dust with flour. Fold the chicken in half and press to seal. Coat the surface with the remaining flour. Repeat for all pieces.
Mix the egg and grated cheese in a bowl to prepare the egg mixture. Dip the prepared chicken into the mixture.
Heat the olive oil in a frying pan over medium-low heat. Add the chicken and cook for 2–3 minutes until golden brown. Flip and pour the remaining egg mixture over the chicken. Cover with a lid and cook for another 2–3 minutes until fully cooked.
Plate the piccata and serve with baby leaf greens and cherry tomatoes.
