INGREDIENTI
Meat
- 🐖 600g pork belly with skin
Vegetables
- 🥔 2 potatoes (300g)
Spices
- 🍃 5 bay leaves
- 6 whole cloves
- 🧂 1 tsp salt
Potato Seasoning
- 1/2 tbsp olive oil
- 🧂 Pinch of salt and pepper
- 1 sprig of dill
Sauce
- 150cc white wine
- 🧂 1/4 tsp salt
- Pinch of pepper
- 🧈 5g salted butter
PASSI
Score the skin of the pork belly in 5mm intervals.
Place the pork belly skin-side down in a tray, pour boiling water to cover the skin, and bake at 200°C for 30 minutes. Remove and pat dry.
Cut the potatoes into wedges and soak in water. Drain and mix with olive oil.
Place the pork belly skin-side up on a baking tray. Insert bay leaves into the scored skin and cloves evenly. Arrange potatoes around the pork.
Bake at 200°C for 40 minutes until the skin is crispy and the meat is cooked through. Reserve the meat juices.
Season the potatoes with salt, pepper, and dill in a bowl.
In a pan, reduce the reserved meat juices with white wine, salt, and pepper until thickened. Add butter and stir until smooth.
Serve the pork belly and potatoes on a plate, drizzling the sauce over the top.
