INGREDIENTI
Fish
- 🐟 2 fillets (160g) Spanish mackerel
Vegetables
- 🌿 1/3 bunch chives
Coating
- Potato starch as needed
Oil
- Salad oil as needed
Marinade
- 🍶 1 tbsp sake
- 🧂 1/4 tsp salt
Chive Sauce
- 🍬 1 tsp sugar
- 🍶 1 tbsp vinegar
- 🧂 1 tbsp soy sauce
- 1/2 tsp grated ginger
PASSI
Cut the Spanish mackerel into 3–4 pieces.
In a bowl, mix the marinade ingredients (sake and salt). Add the mackerel and massage gently. Let it sit for 10 minutes.
Cut the chives into 5mm pieces.
Place the chives in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 30 seconds. Let it cool slightly, then mix with the chive sauce ingredients.
Coat the marinated mackerel pieces evenly with potato starch.
Heat salad oil in a frying pan to 170°C (about 2cm deep). Fry the coated mackerel until golden brown and crispy.
Serve the fried mackerel on a plate and drizzle with the prepared chive sauce.
