- 🥔 1 pound potatoes (for 2 cups diced cooked potatoes)
- 🥚 4 large hard boiled eggs, mashed
- 🥛 1/4 cup mayonnaise
- 🧅 2 tablespoons onions
- 🟡 1 tablespoon mustard
- 1 stalk celery, diced
PASSI
Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 to 20 minutes. Drain.
When potatoes are cool enough to handle, peel and cut into 1/2-inch cubes.
Add potatoes, eggs, mayo, mustard, onion, and celery to a bowl and stir until well combined.
Chill at least 1 hour prior to serving.
