INGREDIENTI
Main
- 🍞 2 slices of toast bread
- 🥚 2 eggs
- 🍖 2 slices of ham
- 💧 1 tbsp water
- 2 tsp salad oil
- 🌿 A pinch of dried parsley
Sauce
- 🥚 2 egg yolks
- 1 tbsp mayonnaise
- 🧈 20g melted salted butter
- 🍋 A dash of lemon juice
- 🧂 A pinch of salt and pepper
PASSI
Mix egg yolks in a bowl until pale and creamy.
Add mayonnaise to the yolks and mix thoroughly.
Add melted butter and mix until combined.
Add lemon juice, salt, and pepper, and mix well.
Heat salad oil in a pan over medium heat and crack the eggs into the pan.
When the edges set, add water and cover the pan. Steam on low heat for 1 minute.
Toast the bread and layer with ham, cooked eggs, sauce, and parsley.
