INGREDIENTI
Meat Mixture
- 200g ground meat
- 100g firm tofu
- 20g fresh breadcrumbs
- 🥛 3 tbsp milk
- 🥚 1 small egg (40g)
- 🧂 1/4 tsp salt
- Pinch of pepper
- As needed salad oil
Meat Juice Base
- 2g powdered gelatin
- 1/4 tsp bouillon granules
- 2 tbsp water
Sauce Ingredients
- 1 tbsp sake
- 1 tbsp soy sauce
- 1/2 tbsp sugar
- 1/2 tbsp cornstarch
- 1/2 cup dashi or water
- 🥚 2 egg yolks
PASSI
Mix ground meat, tofu, breadcrumbs, milk, egg, salt, and pepper in a bowl until well combined.
Shape the mixture into patties and cook in a pan with salad oil until browned on both sides.
Prepare the meat juice base by dissolving gelatin and bouillon in water. Heat gently until fully dissolved.
Combine sake, soy sauce, sugar, cornstarch, and dashi in a saucepan. Heat until thickened, then stir in egg yolks.
Pour the sauce over the cooked patties and serve immediately.
