INGREDIENTI
Noodles
- 50g glass noodles
Meat
- 80g thinly sliced pork belly
Vegetables
- 1/2 bag bean sprouts
- 1/2 bunch chives
- 1/2 stalk green onion
- 2 pieces ginger
Eggs
- 🥚 2 eggs
Seasoning
- 1 tbsp sake
- 1 tsp curry powder
- 1 tsp soy sauce
- 🧂 Pinch of salt and pepper
Broth
- 500cc water
- 1/2 tbsp chicken stock powder
Oil
- 1 tbsp salad oil
PASSI
Cut the glass noodles in half and soak them in water for 20 minutes to soften.
Cut the pork belly into 2cm wide strips. Slice the chives into 4cm lengths, diagonally slice the green onion, and julienne the ginger.
Heat salad oil and ginger in a pot until fragrant, then add the pork belly and stir-fry over medium heat.
Add sake and curry powder, stir briefly, then pour in water and chicken stock powder. Bring to a boil, cover, and simmer for 5 minutes.
Add bean sprouts, green onion, and softened glass noodles. Simmer over medium-low heat for 2–3 minutes.
Season with soy sauce, salt, and pepper. Add chives and stir briefly, then crack the eggs into the soup. Cover and simmer over low heat for about 3 minutes.
