Drain the sea snails and cut into halves or thirds if large. Mix with sesame oil, sesame seeds, and minced garlic.
Julienne the cucumber and onion. Soak onion slices in water to remove sharpness, or skip if preferred.
Slice bell peppers, perilla leaves, and other vegetables. Prepare red cabbage and regular cabbage as well.
Prepare 3 packs of cold noodle broth in a pot. Let it partially freeze for a refreshing texture.
Mix the seasoning ingredients (gochujang, vinegar, sugar, garlic, wasabi) into the broth.
Boil water with salt and cook the somyeon noodles. Drain and set aside.
Assemble the dish by placing noodles in a bowl, topping with vegetables, sea snails, and pouring the seasoned broth over. Garnish with sesame seeds and ice cubes.
