INGREDIENTI
Vegetables
- 🥕 50g carrot, julienned
- 10g mitsuba, chopped
- 1 piece ginger, julienned
Seaweed
- 1 tbsp dried hijiki
Thickener
- 1 tbsp potato starch
Meatball
- 🍗 150g ground chicken
- 🧅 30g green onion, minced
- 1 tbsp sake
- 🧂 1/4 tsp salt
- Pinch of pepper
Broth
- 1 tbsp sake
- 1 tbsp mirin
- 1 tsp soy sauce
- 1/2 tsp dashi powder
- 💧 400ml water
PASSI
Soak dried hijiki in a bowl of water until rehydrated. Drain and coat with potato starch.
Prepare vegetables: julienne carrot and ginger, chop mitsuba, and mince green onion.
Mix ground chicken, minced green onion, sake, salt, and pepper in a bowl until sticky. Add hijiki and mix well. Divide into 6 portions and shape into meatballs.
In a pot, combine broth ingredients (sake, mirin, soy sauce, dashi powder, water) and bring to a boil. Add meatballs and skim off any foam. Add carrot and ginger, cover, and simmer on low heat for 7–8 minutes.
Serve soup in bowls and garnish with chopped mitsuba.
