INGREDIENTI
Wrapper
- 8 spring roll wrappers
Fish
- 140g horse mackerel fillets
Herbs
- 8 shiso leaves
Oil
- sufficient salad oil for frying
Miso Mixture
- 1/2 stalk minced green onion
- 1/2 tbsp sake
- 🍬 1 tsp sugar
- 1.5 tbsp miso
Binding Mixture
- 1/2 tbsp flour
- 💧 1/2 tbsp water
PASSI
Remove small bones from horse mackerel fillets using tweezers and pat dry with paper towels. Slice into 1cm wide pieces.
Finely chop the green onion.
Mix the green onion, sake, sugar, and miso in a bowl to create the miso mixture.
Place a shiso leaf, 1/8 portion of horse mackerel, and miso mixture onto a spring roll wrapper. Roll and seal the edges with the flour-water mixture. Repeat for all wrappers.
Heat 3cm of salad oil in a pot to 160°C and fry the rolls until golden brown on both sides.
