INGREDIENTI
Noodles
- 🍜 300g dry green tea soba noodles
Meat
- 🥩 200g thinly sliced beef
Eggs
- 🥚 3 eggs
Vegetables
- 🧅 5 stalks green onion
- 150g daikon radish
Seasoning
- Pinch of chili powder
- 🧂 1 pinch salt
- 🍬 1 pinch sugar
- 1.5 tbsp soy sauce
- 1 tbsp mirin
- 2 tbsp cooking sake
Oil
- As needed salad oil
Soup Base
- 💧 400ml water
- 2 tbsp soy sauce
- 2 tbsp mirin
- 🍬 0.5 tbsp sugar
- 0.5 tsp dashi powder
- 1 tbsp cooking sake
Garnish
- 🍋 4 slices lemon
- As needed shredded nori
PASSI
Chop green onions and grate daikon radish. Mix grated daikon with chili powder to make momiji oroshi.
Beat eggs with a pinch of salt and sugar, then strain through a sieve.
Heat salad oil on a hot plate and spread thinly. Pour half the egg mixture and cook into thin sheets. Repeat for two sheets, then slice into thin strips.
Clean the hot plate and heat more salad oil. Stir-fry beef until browned, then add seasoning ingredients and cook until the liquid evaporates.
Boil soba noodles according to package instructions, rinse under cold water, and drain well.
Mix soup base ingredients in a microwave-safe bowl and heat for 1 minute.
Spread salad oil on the hot plate, heat, and fry soba noodles until crispy.
Top crispy soba with beef, egg strips, green onions, lemon slices, momiji oroshi, and shredded nori. Serve with the soup base.
