INGREDIENTI
Fish
- 🐟 320g sardines, butterflied
Vegetables
- 🧅 5cm green onion, sliced
- 1 myoga, sliced
- 3 slices ginger
Seasonings
- 🧂 Pinch of salt and pepper
- 1 tbsp all-purpose flour
- 1/2 tbsp salad oil
Sauce
- 2 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tsp sugar
- 2 tbsp ponzu soy sauce
PASSI
Slice the green onion diagonally, cut the myoga in half lengthwise and slice diagonally, and julienne the ginger.
Pat the sardines dry with a paper towel. Season both sides with salt and pepper, then lightly coat with flour.
Heat salad oil in a frying pan over medium heat. Place the sardines skin-side down and cook until browned. Flip and cook for another 2 minutes.
Add the sauce ingredients (sake, mirin, sugar, and ponzu soy sauce) to the pan. Occasionally flip the sardines and cook until the sauce thickens and coats the fish.
Plate the sardines and top with the green onion, myoga, and ginger.
