INGREDIENTI
Meat
- 🐄 130g sliced beef
- 🐖 1 slice pork loin
Vegetables
- 🌱 4 asparagus spears
- 1 small lotus root
- 🍅 9 cherry tomatoes
- 🥬 Chopped cabbage, as needed
Cheese / Dairy
- 🧀 3 pieces camembert cheese
- 🥛 5 tbsp milk
Batter
- 🥚 1 egg
- 7 tbsp water
- 100g all-purpose flour
Seasoning
- 🧂 Salt, as needed
- Ground black pepper, as needed
Oil
- Salad oil, as needed
Breadcrumbs
- Fine breadcrumbs, as needed
Sauce
- 2 tbsp soy sauce
- 2 tbsp Worcestershire sauce
- 2 tbsp oyster sauce
- 2 tsp sugar
- 1 tbsp ketchup
- 100cc sake
- 100cc kombu dashi
- 1 bay leaf
Garnish
- Pickled ginger, as needed
PASSI
Season beef and pork with salt and black pepper. Prepare asparagus, cherry tomatoes, lotus root, and camembert cheese by cutting and skewering them.
Cut beef into small pieces and form into balls before skewering. Flatten pork and cut into rectangular pieces before skewering.
Prepare the sauce by combining soy sauce, Worcestershire sauce, oyster sauce, sugar, ketchup, sake, kombu dashi, and bay leaf in a pot. Simmer and let cool.
Prepare the batter by whisking egg, water, flour, and milk until smooth.
Sift breadcrumbs to make them finer for a crispier coating.
Dip skewered ingredients into the batter, then coat with breadcrumbs.
Heat salad oil to 200°C and fry the skewers until golden brown. Drain excess oil and serve with cabbage, sauce, and pickled ginger.
