INGREDIENTI
Main Ingredients
- 🥓 4 slices bacon
- 200g enoki mushrooms
- 100g shimeji mushrooms
- 1 tbsp olive oil
- 1 tbsp sake
- 🧂 Pinch of salt and pepper
Carbonara Sauce
- 🥚 1 beaten egg
- 🧀 3 slices melting cheese
- 🧀 2 tbsp grated cheese
- 🥛 150ml milk
Toppings
- 🥚 1 egg yolk
- 🧂 Pinch of black pepper
PASSI
Trim and separate the enoki mushrooms. Trim and separate the shimeji mushrooms.
Cut the bacon into 1cm wide strips.
Heat olive oil in a frying pan over low heat, add bacon, and sauté until browned and fragrant. Add enoki and shimeji mushrooms, stir-fry over medium heat until softened. Add sake, salt, and pepper, then mix and transfer to a serving dish.
Wash the frying pan, add the carbonara sauce ingredients, and heat until bubbling. Reduce to low heat and simmer until thickened.
Pour the carbonara sauce over the mushroom and bacon mixture, top with egg yolk, and sprinkle black pepper.
