- 150g somen noodles

- 50g mentaiko

- 🧅 3 stalks green onion, chopped

- 🧈 20g salted butter

- 1 tsp concentrated mentsuyu

PASSI
Cut the green onion into small slices.
Make a slit in the mentaiko skin and extract the contents.
Mix mentaiko and butter in a bowl. Add mentsuyu and mix further to create the mentaiko butter sauce.
Boil water in a pot and cook the somen noodles according to the package instructions. Drain and plate the noodles.
Top the noodles with mentaiko butter sauce, green onion, and shredded nori.
