INGREDIENTI
Vegetables
- 1 pack pea shoots
- 1/4 daikon, sliced
Protein
- 80g sliced pork belly
- 🥚 2 eggs, beaten
- 1 block firm tofu
Oil
- 1 tbsp sesame oil
Seasoning
- 1 tbsp sake
- 🍬 2 tsp sugar
- 1.5 tbsp miso
- 1 tsp grated ginger
PASSI
Drain the tofu using kitchen paper and tear it into bite-sized pieces.
Cut the pork into bite-sized pieces. Trim the roots off the pea shoots and cut them in half. Slice the daikon thinly.
Combine the seasoning ingredients (sake, sugar, miso, ginger) to make the sauce. Beat the eggs in a separate bowl.
Heat sesame oil in a frying pan over medium heat. Add the pork and cook until its color changes, then add the tofu and sear until golden.
Add the daikon and pea shoots to the pan and stir lightly. Pour in the prepared sauce and bring to a boil.
Pour the beaten eggs around the edge of the pan. Once the eggs start to set, mix everything together gently.
