INGREDIENTI
Rice
- 🍚 2 cups soaked rice
Seafood
- 🦪 20 baby scallops (100g)
Vegetables
- 🍄 1/2 pack shimeji mushrooms
- 🍄 1 pack maitake mushrooms
- 1 piece of ginger, julienned
- 🧅 Chopped green onion, as needed
Seasoning
- 2 tbsp sake
- 1 tbsp mirin
- 🧂 1 tsp salt
- 1 tsp soy sauce
- 1/2 tsp Japanese dashi powder
- 💧 400 ml water
PASSI
Trim the root of shimeji mushrooms and separate them. Tear maitake mushrooms into bite-sized pieces. Julienne the ginger.
If baby scallops are large, cut them into bite-sized pieces.
In a clay pot, mix the soaked rice, ginger, and all seasoning ingredients. Spread shimeji mushrooms, maitake mushrooms, and scallops evenly on top.
Cover the pot and heat over medium heat until boiling.
Reduce to low heat and cook for 12–15 minutes. Increase to medium-high heat for 30–40 seconds to create a crispy bottom layer, then turn off the heat and let it steam for 10 minutes.
Sprinkle chopped green onions and mix the rice before serving.
