INGREDIENTI
Seafood
- 🦐 100g peeled shrimp
- 🐙 150g fresh octopus
Meat
- 200g beef tripe
Vegetables
- 🥬 150g cabbage
- 30g chives
- 100g chrysanthemum greens
- 🧅 80g green onion
- 100g enoki mushrooms
Noodles
- 20g Korean glass noodles
Seasonings
- 1 tbsp gochujang
- 1 tbsp Korean chili powder
- 1 tbsp mirin
- 1 tbsp soy sauce
- 1 tbsp miso
- 🧄 1 tbsp minced garlic
- 1/2 tbsp beef stock powder
- 💧 300ml water
PASSI
Cut the cabbage, chives, chrysanthemum greens, green onion, and enoki mushrooms into appropriate sizes as described.
Soak the glass noodles in hot water for 5 minutes, then drain.
Clean the shrimp and octopus thoroughly, removing any impurities. Cut the octopus into bite-sized pieces.
Clean the beef tripe with flour, rinse, and marinate with the seasoning mixture.
Layer the vegetables, noodles, shrimp, octopus, and beef tripe in a pot. Add the soup ingredients and bring to a boil.
Simmer for 7–8 minutes, then add the chives and chrysanthemum leaves. Cover and cook for another 2–3 minutes.
