INGREDIENTI
Vegetables
- 1/2 bunch nira
Meat
- 100g thinly sliced pork belly
Eggs
- 🥚 2 eggs
Noodles
- 40g harusame (glass noodles)
Wraps
- 8 spring roll wrappers
Oils
- 1 tbsp sesame oil
- As needed salad oil
Seasonings
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1 tbsp oyster sauce
- 💧 100ml water
- 🧂 Pinch of salt and pepper
Binding
- 1 tbsp flour
- 💧 1 tbsp water
PASSI
Cut nira into 3cm pieces and slice pork thinly. Crack eggs into a bowl and mix.
Heat sesame oil in a pan, pour in egg mixture, and stir to make scrambled eggs. Remove from pan.
Using the same pan, add pork and cook until done. Add seasonings (☆), harusame, and nira. Stir over medium heat until harusame absorbs the liquid.
Mix scrambled eggs into the pan and let the mixture cool.
Place filling onto spring roll wrappers and fold. Seal edges with flour-water mixture.
Heat salad oil to 170°C and fry rolls until golden and crispy.
