INGREDIENTI
Seafood
- 🦪 6 oysters (120g)
Vegetables
- 1/4 daikon (300g), grated
- 100g mizuna, chopped
- 🧅 1 green onion (165g), sliced
- 🍄 100g shimeji mushrooms, separated
Protein
- 🧈 300g tofu, cubed
Seasoning
- 2 tbsp sake
- 2 tbsp mirin
- 🧂 1/3 tsp salt
- 1 tbsp soy sauce
- 1/3 tsp dashi powder
- 💧 600ml water
Condiments
- Ponzu soy sauce, as needed
PASSI
Grate the daikon and lightly squeeze out excess water. Chop mizuna into 3cm pieces. Slice green onion diagonally into 1cm pieces. Separate shimeji mushrooms.
Cut tofu into bite-sized cubes.
Place oysters in a bowl with 1 tbsp of cornstarch (not listed) and gently rub. Rinse oysters under water, changing water 3 times.
In a pot, mix all seasoning ingredients and bring to a boil over medium heat. Add tofu, green onion, and shimeji mushrooms. Cover and simmer on low heat for 5 minutes.
Add grated daikon and bring to a boil again. Add oysters and cook for 2–3 minutes over medium heat. Add mizuna and cook briefly.
Serve with ponzu soy sauce on the side.
