INGREDIENTI

- 🍗 2 chicken thighs (400g)
- 🧀 20g pizza cheese
- 🍄 4 mushrooms, chopped
- 🧅 1/2 onion, sliced
- 🧂 Pinch of salt and pepper
- 1 sprig rosemary
- 1 tbsp olive oil
Sauce Ingredients
- 1 tbsp sake
- 🧂 1/3 tsp salt
- 🧂 Pinch of pepper
Cooking Oil
- 1 tbsp olive oil for frying
Garnish
- 20g watercress
- 🍅 4 tomato wedges
- Mustard to taste
PASSI
Season chicken thighs with salt and pepper. Remove rosemary leaves from half the sprig and rub onto the chicken.
Chop mushrooms roughly and slice the onion thinly.
Heat olive oil in a pan over medium heat. Sauté onions until translucent, then add mushrooms and cook for 2 minutes. Add sauce ingredients and cook until reduced. Let cool.
Stuff the chicken thighs with the mushroom sauce and pizza cheese. Secure with toothpicks.
Heat olive oil in a pan over medium-high heat. Place chicken skin-side down and top with remaining rosemary. Cook for 3 minutes until browned. Flip, cover, and cook on low heat for 7 minutes.
Plate the chicken and garnish with watercress, tomato wedges, and mustard as desired.
