INGREDIENTI
Meat
- 12 slices pork belly
Vegetables
- 16 shiso leaves
Seasoning
- 2 tbsp flour
- 🧂 Pinch of salt
- 1 tbsp salad oil
Sauce
- 2 tbsp sake
- 🍬 1 tbsp sugar
- 2 tbsp soy sauce
- 🧄 1 tsp grated garlic
- 1 tsp grated ginger
- 💧 200 ml water
PASSI
Trim the stems off the shiso leaves. Mix all sauce ingredients in a bowl.
Lay pork belly slices slightly overlapping, sprinkle with salt and flour. Place shiso leaves on top, sprinkle flour again, and roll tightly.
Repeat the layering and rolling process with the remaining pork belly and shiso leaves.
Heat salad oil in a pan and place the rolls seam-side down. Sear until golden brown, turning to sear all sides.
Add the sauce mixture to the pan, bring to a boil, cover, and simmer on low heat for 15 minutes, turning occasionally.
Remove the rolls and reduce the sauce until thickened.
Slice the rolls into desired thickness and drizzle with the reduced sauce before serving.
