Main Ingredients
- 200g pork tenderloin
- 🧄 1 clove garlic
- 🧅 1/2 onion
- 2 king oyster mushrooms (80g)
- 1 pack maitake mushrooms (80g)
- 6 green olives
- 🧂 1/2 tsp salt
- A pinch of black pepper
- 2 tsp all-purpose flour
- 1 tbsp olive oil
- A pinch of dried parsley
Tomato Sauce
- 🍅 1 can (400g) diced tomatoes
- 🍬 1 tsp sugar
- A pinch of salt and pepper
- 1 dried bay leaf
PASSI
Slice the pork tenderloin into 1cm thick pieces. Season with salt and pepper, then coat with all-purpose flour.
Mince the garlic and onion. Trim the base of the king oyster mushrooms and tear them into strips. Trim the base of the maitake mushrooms and separate them into smaller pieces. Slice the green olives into rings.
Heat olive oil in a pot over medium heat. Add garlic and onion, cooking until fragrant. Add the pork and cook until the meat changes color.
Add the king oyster mushrooms, maitake mushrooms, and sauté briefly. Add the green olives and all tomato sauce ingredients. Simmer on low heat for 10 minutes, stirring occasionally.
