- 🧀 50g cream cheese
- 🥛 1 tbsp unsweetened yogurt
Vegetables
- 🥔 2 medium potatoes (300g)
Nuts
- 🌰 4 almonds, roughly chopped
Seasoning
- A pinch of dried parsley
- 🧂 1 tsp sugar
- 🧂 A pinch of salt and pepper
PASSI
Cut the potatoes into bite-sized pieces and soak in water for 5 minutes. Drain and place in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 5 minutes. Drain the water. Roughly chop the almonds.
Place cream cheese in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 20 seconds until softened. Mix well. Add yogurt and seasonings (sugar, salt, and pepper) and combine.
In a bowl, combine the potatoes, chopped almonds, and the cream cheese mixture. Mix well.
Serve on a plate and sprinkle with dried parsley.
