INGREDIENTI
Vegetables
- 🎃 200g pumpkin, peeled and chopped
- 🧅 1/2 onion, thinly sliced
Canned Goods
- 🐟 1 can tuna, 70g
Dairy
- 🧈 20g salted butter
- 🧀 50g pizza cheese
Liquids
- 🥛 200ml unsweetened soy milk
Seasonings
- 🧂 1/4 tsp salt
- Pinch of pepper
- 🌾 1 tbsp all-purpose flour
- 2 tsp curry powder
- 1 tsp consomme powder
PASSI
Remove seeds and peel from the pumpkin, then cut into bite-sized pieces. Microwave on a heatproof plate at 600W for 4 minutes.
Thinly slice the onion.
Heat butter in a pan over low heat, add onion and sauté until translucent. Add pumpkin and tuna, and stir-fry together.
Add the seasonings (salt, pepper, flour, curry powder, consomme) and stir until no longer powdery. Gradually add soy milk, stirring until thickened.
Transfer the mixture to a heatproof dish, top with pizza cheese, and bake in a toaster oven for 7–10 minutes until the cheese melts.
