INGREDIENTI
Meat
- 🥩 150g beef shank
Vegetables
- 80g konjac
- 🧅 20g chopped green onion
Oil
- As needed salad oil
Seasoning for beef and konjac
- 1/2 tbsp sake
- 1/2 tbsp mirin
- 🍬 1 tbsp sugar
- 🧂 1 1/2 tbsp soy sauce
- 100g beef broth
Seasoning for beef preparation
- 1 tbsp sake
- 2 slices ginger
Batter
- 🥚 1 egg
- 💧 400cc water
- 1/2 tsp dashi powder
- 🌾 100g all-purpose flour
PASSI
Tear konjac into 1.5cm pieces using a spoon.
Boil konjac for 3 minutes, then drain.
Boil beef shank in water for 5 minutes, drain, and rinse to remove fat and impurities.
Simmer beef shank with ginger and sake in water for 1 hour, then separate broth and beef.
Cook beef shank and konjac with seasoning until liquid is absorbed, about 20 minutes.
Prepare batter by mixing egg, water, dashi powder, and flour until smooth.
Heat takoyaki pan and grease lightly with salad oil.
Pour batter halfway into each mold, add beef and konjac mixture, then top with green onion.
Cook for 3–5 minutes until batter firms, then flip and cook until golden brown.
