INGREDIENTI

- 🍆 2 eggplants
- 🧅 1/2 scallion
- 8 sheets rice paper
Sweet and Sour Sauce
- 1 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp syrup or allulose
- 1 tbsp ketchup
- 1/2 tbsp oyster sauce
- 💧 3 tbsp water
PASSI
Slice the eggplants vertically and horizontally into bite-sized pieces.
Soak rice paper in warm water and wrap each piece of eggplant.
Heat oil in a frying pan and pan-fry the wrapped eggplants until golden brown.
Finely chop the scallion.
Mix soy sauce, vinegar, syrup, ketchup, oyster sauce, and water in a bowl to prepare the sweet and sour sauce.
In the same pan, sauté the scallions, then add the sauce and simmer until thickened.
Place the fried eggplants on a plate and pour the sauce over them.
