INGREDIENTI
Meat
- 🍗 1kg whole chicken
Vegetables
- 🧅 1 onion, 200g
- 🧄 2 cloves garlic
Dry Ingredients
- 1 cup breadcrumbs, 40g
Oils and Fats
- 2 tbsp olive oil
- 🧈 10g salted butter
Herbs and Spices
- 1/2 tbsp herb salt
- 1 tbsp dried oregano
- 1/2 tbsp dried basil
- Pinch of pepper
Marinade
- 50cc vinegar
- 100cc soy sauce
PASSI
Cut the onion into coarse pieces and mince the garlic.
Clean the chicken thoroughly and pat dry with paper towels.
Heat olive oil in a pan over low heat, add garlic, and sauté until fragrant. Add onion and cook until softened. Mix in herbs and breadcrumbs, then let cool.
Stuff the chicken with the breadcrumb mixture and secure the opening with toothpicks. Tie the legs with kitchen twine and place in a bag with the marinade. Refrigerate overnight.
Place the chicken on a baking sheet lined with parchment paper. Brush with olive oil and pour marinade over the chicken.
Bake at 220°C for 30 minutes until golden brown. Rotate the pan and baste with juices, then bake for another 15–20 minutes.
Transfer the pan juices to a skillet, simmer until thickened, and stir in butter. Serve as a sauce.
